Morning Session Keynote Speaker : Bill Hubbert of Hubbert’s Maple

We are fortunate to have long-time Sugarmaker Bill Hubbert as our keynote speaker. Bill and family been making syrup on their current farm since 1949 and Bill has promised to share much of what he has learned over his lifetime of sugar making in the near north country. Bill is also a Registered Professional Forester so he can also answer your maple forest management questions!
Bill has significantly increased sap yields in recent years , we can't wait to find out how he did this!

Afternoon session will include:

What’s in Your Syrup?

We know maple syrup is mostly sugar, but have you heard of sucrose, glucose, fructose or invert sugar?
We will tell you why you need to learn what sugar is made of and why it is important for making your best candy, butter and other maple products. We will help you improve the final results of your maple products!

What kind of spile is best?

We have all experimented with different spiles over the years. We will be leading a review of the current spiles on the market and go over some of the strengths and weaknesses of each. This should be a lively discussion knowing we all may have our personal favorites!

Cost : $25.00 for OMSPA members , $35.00 non members which includes lunch
